DREAMING OF PINXTOS IN SAN SEBASTIEN

Txakoli is the traditional wine from the Basque Coast of Spain that is served in the Pintxos bars. It is light in alcohol, slightly frizzante, and bursting with acidity. It is a perfect match for pintxos, fried fish, seafood, and mild cheeses. But, since it is absurdly delicious and easy to drink – we recommend pairing it with anything – especially a good time. If you have ever been in the streets of San Sebastien at 2 in the morning – then you already know what we are talking about.
Txakoli should be poured from a little bit of height (at least 5 inches) into the glass to allow the wine to aerate and the frizzante in the glass to develop a little bit of foam. In San Sebastien bartenders compete to see how high from the glass they can pour the Txakoli. . .
Bodegas Gurrutxaga makes a very traditional Txakoli wine from Hondarrabi Zuri grapes. The vineyards of Bodegas Gurrutxaga are planted right on the sea in the Bay of Biscay in Bizkaia 60km west of San Sebastien. Its beautiful sloped vineyards lead down to the sea and must be harvested by hand. The position of the vineyards gives Gurrutxaga its slightly saline finish. We have spent a lot of time in San Sebastien over the last 5 years and tasted most if not all of the Txakoli available – and we think this is the best one. Enjoy.
