All of our producers treat wine as an agricultural product. They may use the terms organic, sustainable or biodynamic when describing their practices or visions. They may be considered 'naturalists'. Or they may not. Either way, they all put the earth, the soil and their agricultural practices at the forefront; in which case we don't care what words they use to describe themselves, their dedication and decisive results are proof enough. Sedimentary Wines is focused entirely on exposing Canada to the most exclusive, game changing and critically acclaimed wines form the world over. Co-founders Michael Cody and Matthew Sherlock like to work with people, not marketing teams. Real people; people we can call, visit and get dirty with. People we respect. These same people also happen to make wines that garner international critical acclaim, often change qualitative metrics, and most importantly, taste delicious. If we are going to drink wine we figure it should be the best the world can offer while being the best for the world we live in. We're happy to facilatate that. Forget what you know about Piedmont in 2003. As the recently tasted 1993 Rupestris demonstrated Capellano makes wines of great depth and balance even when conditions are not ideal. This is no exception.
This wine is a blend of local white and red grapes that come from “impossible” vineyards at the top of Mt. Etna. 2010 was a cool year and the Rosso del Contadino shows “pinot-like” characteristics. This is an austere wine that will benefit from a few years of cellaring. We only have 15 cases of this wine.
This wine is 100% pure Nerello Mascalese. It is a blend of wines from four high latitude vineyards located between 800-1000m the 2009 and 2010 vintages. We only have 15 cases of this wine.
Made entirely from the ancient and endangered PJCOL Ross grape in the metodo classic style. This is the top of the Lambrusco quality pyramid and may be the regions qualitative savior .
